Ingredients
Cucumber 2 ea
Spinach picked 1 quart
Miran 1/2 cup (or rice vinegar, if using rice vinegar add a teaspoon of honey)
Soy sauce 1/4 cup
Sriracha 1 tablespoon
Minced ginger 1 teaspoon
Sesame oil 1 teaspoon
Olive oil 1/2 cup
Method
Cut cucumbers into rounds about 1 inch long. Place in ziploc bag with miran, soy, sriracha, ginger and oil. Seal bag well and smash
against counter until cucumbers are lightly smashed and bruise. Toss spinach, cucumbers and all remaining liquid together. Add salt
to taste
