Ingredients
Bacon 2 Slices Diced
Mushrooms 1 Cup Sliced
Hearty Greens 1 Quart Picked
Balsamic Vinegar ½ Cup
Honey 1 Tablespoon
Red Wine Vinegar 1 Tablespoon
Black Pepper 1 Teaspoon
EVOO 2 Teaspoon + 2 Tablespoon
Goat Cheese 1 Oz
Method
In a small bowl combine balsamic, honey, vinegar, pepper and 2 Tablespoons of EVOO. Stir Well. Cook bacon over medium heat until about 2/3 crispy. Add mushrooms and 2 teaspoon EVOO and cook until mushrooms are tender and bacon is crispy. Add Balsamic mix and stir vigorously. While still warm pour over greens in a mixing bowl and toss well. Season. Plate and season with goat cheese.
