Roasted Apples and Potatoes with Bronze Fennel and Goat Cheese
Ingredients:
Apples 3 ea
Potatos 2 ea
EVOO 3 Tablespoons
Lemon Juice ½ lemon
Goat Cheeze 4 oz
Pine Nuts ½ Cup
Bronze Fennel 1-2 Stalks
Chili Flake 1 teaspoon
Salt To Taste
Sugar 1 t
Method:
Peal and medium dice potatoes. Blanch potatoes in boiling salted water. While potatoes are cooking medium dice apple. Toss cooked potatoes and apples with EVOO, pepper, salt and sugar. Roast in oven at 450 until edges begin to brown. Chop fennel (like you would parsley). Roasted potatoes and apples with lemon juice, goat cheese, pine nuts and fennel. Serve.
